How to Cook Beans 6 Easy Steps

Beans are a popular food in Nigeria, a lot of people eat beans while some do not eat beans, because could bloat their stomach or cause constipation. it is advisable to have beans in the family menu and to eat beans because of the protein it contains and children are expected to eat lots of beans to look healthy and to grow.  

This cooking method and ingredients will guide you on how to cook your beans without getting bloated or cook half-cooked beans just follow the instructions according and be assured that you will have a delicious delicacy.

Ingredients to cook beans

  • 3 cigar cups (approx. 750g) brown/black eyed beans
  • Red palm oil (enough to color)
  • 1 medium onion
  • Pepper & Salt (to taste)
  • 1 big stock cube
  • 500g Yam/Plantain/Sweet Potatoes/Baby Corn (Optional)

  • 4 cups Brown (honey beans)
  • 3 medium Red Onions. (chopped)
  • 2 bonnet pepper or Jamaican hot Pepper (reduce to 1 if you want to encourage your kiddos to give it a try)
  • 1 cup Palm Oil
  • Salt to taste.

You can also add crayfish if you want but I prefer not to add it because it makes the beans have an over-seasoned taste.

Before you cook Beans Porridge

  1. Soak the beans in cold water for 5 hours. Boil the beans for 5 minutes and discard the water. Wash the beans in cold water and set aside. This soaking and pre-cooking process will help reduce the gas inducing elements.
  2. Chop the onions, grind the crayfish (if you are using it) and pepper.
  3. If you will use yam/plantain/sweet potatoes, wash, peel and cut them into 1-inch cubes and set aside. If you will use baby corn, drain the preservation liquid, rinse and set aside.

You cant cook beans without following these procedures.

  1. Measure out your beans, wash, put in a clean pot with water on the stovetop, and bring to boil.
  2. Once it boils, sieve out the water, add more water and rinse without rubbing then put it back on the stove. This helps to reduce the pesticides that may have been used during farming and also aids the expulsion of the gas that causes bloating for which beans is notorious for.
  3. When the beans start to boil again, then add 1 cup of chopped onions and a tablespoon of salt. (Or to your taste)
  4. As the water dries keep adding water to a level just above the beans, and keep checking the beans till it is cooked to a soft to touch but not mushy consistency.
  5. When the beans are soft to touch, (like the picture below) allow the water to reduce but not dry out. Then turn off the heat.

How to cook beans sauce

  1. While the beans are cooking, put a clean saucepan on the stovetop and heat up the palm oil. (Be careful not to burn the oil)
  2. Pour in the remaining 31/2 cups of onions. You will hear the sound to show it can now fry the onion. You are on track. Stir a bit then add your chopped scotch bonnet pepper or Jamaican pepper.
  3. Keep stirring until the onions soften, please don’t leave your spot so it doesn’t get burnt. Can you perceive the aroma? I sure can. It should take about 4 minutes to get it soft and ready. Turn off the heat.

Your beans porridge is ready after you must have taken those steps. If you cooked the beans porridge without any of the additions, serve with Fried Plantain, Fried Yam, or fried sweet potatoes, pap, garri, and even bread. then after eating your beans be ready to fall asleep.
