How to Prepare Minced Meat Jollof Rice (10 Easy Steps)

Minced meat Jollof rice is a delicious type of Nigerian Jollof Rice prepared with minced beef or ground beef. Kids who do not eat their meat because of the size will prefer this meat, it is easy for kids to eat and it is very attractive too. Imagine a child seeing so much meat on his plate, he is likely to eat and finish his meal because of the meat.

For most parents, they dice or ground the meat so the child doesn’t see the meat, that way they make the meat disappear into the rice without the child knowing that they are eating meat. This rice is easy to make, the instructions and ingredients are below, you just have to follow them to prepare your minced meat rice. You can use whichever protein of your choice for your minced meat Jollof.

Ingredients for making Minced Meat Rice

These are the ingredients for your minced meat Jollof rice;

  • 3 cups (600g) long grain parboiled rice
  • 3 cups beef mince
  • 1½ cups tomato stew
  • Chunks of beef
  • 1 red onion (diced)
  • 1 cup diced carrots
  • 1 cup diced red and green bell peppers
  • 2 teaspoons black pepper (or to taste)
  • 2 teaspoons thyme
  • 3 small seasoning cubes
  • 3 tablespoons vegetable oil
  • Salt (to taste)

Notes about the ingredients for minced meat Jollof.

  1. One standard measuring cup (level) of long grain parboiled rice equivalent to 1 milk cup or 1 small party cup.
  2. I used lumps of meat too because in Nigeria it is disrespectful to serve a meal such as Jollof Rice without at least one lump of meat.
  3. You can use habanero peppers (atarodo, ose oyibo, atarugu) if you do not have black peppers. I prefer black pepper for Beef Mince Jollof Rice.
  4. Use any beef flavour seasoning/bouillon cubes.
  5. I highly recommend red onions; it adds colour and a nice flavour to the meal.
  6. I normally use a ration of 1:1 for the rice and beef mince but feel free to add more beef mince if you wish but never less (in cups) than the rice.

Before you cook Beef Mince Jollof Rice

  1. If you do not have tomato stew, prepare some. 
  2. Parboil the rice
  3. Cook the chunks of beef with two small stock cubes, 1 tablespoon of thyme and one third of the chopped onions. When done, set the stock aside and grill or broil or deep-fry the meat.

How to prepare minced meat jollof rice

For a perfect Beef Mince Jollof Rice, Pour the vegetable oil into a clean dry pot and heat it up.

  1. Add one-third of the diced onions and fry for 2 minutes.
  2. Add the beef mince and stir quickly and continuously till pale and crumbly. Please see the video below for how I do this.
  3. Add 1 tablespoon thyme and 1 small stock cube.
  4. Stir and pour the beef stock/broth into the pot.
  5. Add the tomato stew and the black pepper, stir, cover and leave to boil.
  6. Add the drained parboiled rice, stir and make sure the water level is at the same level as the rice. If less, top it up. Add salt if necessary.
  7. Cover the pot and leave to cook on low to medium heat. This way the rice does not burn before the water dries up.
  8. When you can no longer see the water (but it is not yet dry), add the diced carrots. Stir the top of the rice, cover, and continue cooking.
  9. When the water dries up, add the diced red pepper, green pepper, and the remaining onions. Stir very well and cover the pot again.
  10. Once it steams again, it is done. If you parboiled the rice as shown in the video below, the rice should be done by the time the water is dry. Enjoy the delicious taste of your minced meat.
